[EC 3.1.1.3] an enzyme of the hydrolase class that catalyzes the cleavage of the two outer fatty acyl groups from triglycerides in the digestion of dietary fats. Individual enzymes are frequently named for the tissues with which they are associated; see entries under lipase. The term is sometimes used specifically to denote pancreatic lipase.
