[EC 3.1.1.1] an enzyme of the hydrolase class that catalyzes the cleavage of the ester bond in a carboxylic ester to form an alcohol and a carboxylic acid. It has a wide specificity, usually acting on short-chain acids linked to monohydric alcohols, and also hydrolyzes esters of vitamin A.
