Some viruses are only within a company while others are spread out all around the world. Most viruses are in the "wild," where the average user could contract and be infected with the virus. Some viruses are identified and stopped, or created for testing purposes only, prior to distribution into the wild. The Joe Wells list is widely accepted as a leading list of viruses incidents documented in the wild.

Relates mostly to the processing method used, when the fruit of the coffee cherry is allowed to dry on the beans before removal. Earthiness can also be detected, I presume, based on the soils the coffee grows in (there are earthy Indonesian coffees that are wet processed). Earthiness can quickly become dirtiness. Dirty coffee is unpleasant. The winey flavors of some wild coffees is called sour when it becomes unpleasant.
