Generally, food additives are substances that, when added to food, can become part of the food or alter its characteristics, with the exception of mineral nutrients and vitamins (which are added to enhance the nutritional value of food), spices, seasonings, flavourings, agricultural chemicals, and substances added to the packaging material.

a condition whereby a person is unable to tolerate certain parts of foods. This is different from a food allergy because the immune system is not involved. An example is lactose intolerance, in which certain individuals cannot digest the sugar found in milk. Food intolerance is much more common than food allergy.
