Lamb's, calf's, pig's and ox kidney are all edible and classed as offal. Lamb kidney is best for frying and grilling. Calf's kidney can be cooked whole or sliced and is best saut?d or braised. Pig's kidney has a stronger flavor, and while it can be sliced and fried, it is more often used in p?es and stuffings. Ox kidney is used with beef in pies and puddings and needs long slow cooking to tenderize it.
