A volatile material that is contained within plant cells and derived by physical process (such as distillation) from the plant. Some essential oils are not in the living tissue but are formed during destruction of the living tissue. Certain botanical species have little scent buy they produce a volatile or essential oil when macerated that starts a fermentation (destructive) process - the macerate is then distilled and the volatile oil comes off.
