fumarate hydratase [EC 4.2.1.2] an enzyme of the lyase class that catalyzes the hydration of fumarate to form L-malate in a reaction of the tricarboxylic acid cycle (see illustration at cycle). Deficiency causes mental retardation and failure to thrive. Called also fumarase.
