is the period the whisky is left in wooden barrels to mature, a minimum of three years but can be between 8 and 25 years in bonded warehouses for single malts or deluxe blends. During this time the flavour generally improves but whisky left too long may be dominated by the wood. The barrels lose about 2% alcohol per annum - the 'angel's share'.
