chitin is a polysaccharide composed of the essential sugar N-acetylglucosamine. It is found in the shells of crustaceans (shrimps, crabs, krill). In some areas, like Southern Cameroon, crushed chitlin is a popular condiment. Insects, yeast, mushroom cell walls, and certain bacterial cell walls also contain chitin; but these sources have not been commercialized or studied to the same degree as seafood chitin. In test animals, chitin has shown to reduce allergic reactions.
