Tofu, also known as soybean curd, is a soft cheese-like food made by curdling fresh, hot soymilk. Nigari, calcium sulfate, and vinegar or lemon juice are added to soymilk, excess moisture is squeezed out, and the remaining curds are pressed into soft blocks.
