This is a shiny, yellowish white butter, quite hard at room temperature. It is made by processing and separating the pure chocolate liquor into cocoa solid cakes (used to produce cocoa powder) and cocoa butter. It is composed entirely of vegetable fats. When added to mixtures it will make them firmer but will also create more of a melt in the mouth experience.
