In the sugar industry, a centrifuge is a machine used to separate crystals of sugar from sugar syrups. The mixture of syrup and crystals is fed into a rapidly spinning cylinder with perforated walls. Centrifugal force causes the syrup to move outwards through the perforations, whilst the crystals are trapped inside the cylinder and can thus be separated and dried.
