A piece of cooking equipment that cooks, heats, glazes, or broils food by overhead radiant heat. Mainly found in commercial kitchens. It is often used to caramelize cr?e brul?s, for gratin?s, and to give completed plates a final blast of heat. It got its name from the insignia, a salamander, of one of the original manufacturers; in myth the animal is able to live in fire. Salt Pork Fresh pork that been preserved with salt or a salt brine. More common in Europe than in N America.
