[EC 3.4.23.1], an enzyme of the hydrolase class that catalyzes the hydrolysis of proteins with preferential cleavage at phenylalanine, tryptophan, tyrosine, and leucine residues. It is secreted by the gastric mucosa in the form of pepsinogen and has an optimum pH of 1.5 to 2.0.
