galangal This is known as the Thai ginger. Similar in appearance to it's more familiar relative, ginger, the galangal is larger and pale yellow in colour. It is highly aromatic and has a more delicate flavour than ginger, with a sweetish, slightly medicinal taste. FACT: In Thailand, grated galangal is mixed with lime juice and taken as a tonic. This tonic is believed to help respiratory infections and stomach upsets and to aid digestion.
