tryptophan an amino acid that occurs in proteins; is essential for growth and normal metabolism; a precursor of niacin, which helps the body produce serotonin, a chemical that acts as a calming agent in the brain and plays a role in sleep. Turkey contains tryptophan, however, the tryptophan in a Thanksgiving turkey has to vie with all the other amino acids that the body is trying to use. So only part of the tryptophan makes it to the brain to help produce serotonin.

tryptophan 2,3-dioxygenase [EC 1.13.11.11] an enzyme of the oxidoreductase class that catalyzes the first step in tryptophan catabolism, the oxidation of tryptophan to formylkynurenine. The enzyme is a heme protein.

tryptophan 5-monooxygenase [EC 1.14.16.4] a monooxygenase that activates molecular oxygen to catalyze the hydroxylation of tryptophan to hydroxytryptophan, a precursor of serotonin; it requires the cofactor tetrahydrobiopterin. The enzyme occurs in the central nervous system and is inactivated in malignant hyperphenylalaninemia.
