A generic name for alpha- and beta-amylase, enzymes that hydrolize starch into maltose. Alpha-amylase converts insoluble and soluble starch into dextrins and maltotriose, and then beta-amylase hydrolyzes the dextrins into glucose, maltose, maltotriose and limit dextrins. The complete degradation of starch requires both alpha- and beta-amylase. Amylases are also present in saliva, which accounts for the practice of mastication in primitive times to induce fermentation in beery substances.
