| beta sheet |
(beta pleated sheet) A secondary protein structure in which two or more extended polypeptide chains are hydrogen-bonded to one another in a planar array; the "pleats" are formed by angles of bonds in the peptide chains. In addition there is a left-handed twist between adjacent strands when looking at right angles to the strand direction. The beta strands in a sheet can be arranged to form parallel, antiparallel or mixed sheets.
