alkalinity The condition of pH between 7-14. The chief cause of alkalinity in brewing water is the bicarbonate ion (HCO 3 -1 ).

alkali Any strongly basic substance of hydroxide and carbonate, such as soda, potash, etc., that is soluble in water and increases the pH of a solution.

alkaline Term that describes a certain pH factor. The pH factor stands for a concentration of hydrogen ions. The more hydrogen ions present, the more acidic the condition. The pH scale reaches from 1 (= very acidic) to 14 (= very alkaline). Pure water has a pH value around 7 and is neutral. Our blood has a pH value of 7.35 (compare also acid-alkaline balance).
