This is achieved by the addition of egg whites to the cold stock and then brought to a simmer; the cooked egg whites, having absorbed the impurities in the stock, are strained off and discarded. A 'double' consomm?is one that has been reduced by half, thus its flavour has been doubled (in theory, anyway).
