[EC 2.5.1.2] an enzyme of the transferase class that catalyzes the transfer of the pyrimidine moiety of thiamine from the thiazole ring component to pyridine or another base or thiol compound. The reaction inactivates thiamine. The enzyme occurs in the gastrointestinal tract of many fresh water animals. Called also thiaminase I.
