| prolamin |
any of a group of globular proteins found mainly in cereals; they are soluble in 70–80 per cent alcohol but insoluble in water and absolute alcohol and contain high levels of glutamic acid and proline. Examples are gliadin (found in wheat and rye) and zein (found in corn). Called also alcohol-soluble protein.
