a homopolysaccharide containing fructose residues in 2,6-glycosidic linkage. Formed from sucrose by the enzyme levansucrase, levan, which is produced by certain species of Bacillus and Leuconostoc, increases the adhesion of bacteria to surfaces of the teeth and promotes the formation of dental plaque.
