Intolerance to gluten occurs in a disease called gluten-sensitive enteropathy, or celiac sprue. Gluten- sensitive enteropathy is caused by a unique abnormal immune response to certain components of gluten, which is a constituent of the cereal grains wheat, rye, and barley.
