beta sheet The β sheet (also β-pleated sheet) is a commonly occurring form of regular secondary structure in proteins, first proposed by Linus Pauling and Robert Corey in 1951. It consists of two or more amino acid sequences within the same protein that are arranged adjacently and in parallel, but with alternating orientation such that hydrogen bonds can form between the two strands. beta sheet (beta pleated sheet) A secondary protein structure in which two or more extended polypeptide chains are hydrogen-bonded to one another in a planar array; the "pleats" are formed by angles of bonds in the peptide chains. In addition there is a left-handed twist between adjacent strands when looking at right angles to the strand direction. The beta strands in a sheet can be arranged to form parallel, antiparallel or mixed sheets.
