anticarcinogen A substance or agent that counteracts the effect of a carcinogen or a cancer-producing substance. Ongoing research is investigating the anticarcinogenic role of the isoflavones found in soyfoods. Isoflavones are found in significant amounts only in soybeans and soyfoods. A 1990 National Cancer Institute workshop identified five different chemical classes of anticarcinogens in soybeans ?phytosterols, phytates,saponins, protease inhibitors, and isoflavones.
