biuret r. biuret (H2N–CO–NH–CO–NH2) forms a chelate having an intense violet-red color with the Cu2+ ion in alkaline solution; the same reaction also occurs with tripeptides and polypeptides, but not with dipeptides or amino acids and is used in colorimetric methods for total protein.
