| 설명 | 우유나 기타 액체를 중등도의 온도로 일정시간 가열하는 방법으로 60℃에서 30분간 가열한다. 액체의 맛을 유지하면서 거의 대다수의 병원균을 멸균하고, 나머지 균의 발육을 현저하게 억제시킨다. 프랑스의 파스퇴르(Pasteur(1822~1895))에 의해 고안된 방법이다. 포도주의 품질저하를 일으키지 않고 산패를 막기 위해, 즉 포도주의 이상 발효 방지법으로서, 60℃에서 30분간 가열처리를 하는 저온살균법을 확립하였다. 주로 우유, 달걀, 혈청, 맥주 따위와 같이 비타민이나 단백질이 많이 들어 있어 고온에서 변질되기 쉬운 식품을 살균할 때 쓴다. |
